Breakfast Veggie Pile-up

The garden is in full swing with green beans, zucchini, cucumbers, and various other greens. Exciting! I've been eating lots of veggies for breakfast lately - always in the form of some sauteed veggie medley topped with either fried or scrambled eggs. It feels really decadent to eat so many vegetables for breakfast, and it is surprisingly easy. And you can use just about anything. I always make the veggie mix on my fave cast iron skillet, starting with the onions and slower cooking veggies, and adding in whatever else I am using so it all finishes about the same time. Then I dump the veggies onto my plate, put a little ghee in the pan, and cook up a few eggs to go on top.
This one was beets (from my co-worker's CSA), red cabbage, onion, and a little bit of sweet potato and bacon. I put a little homemade mustard in with the veggies too.

Greenery! There is zucchini, green beans, onions, basil, and kale in this one - everything was from the garden but the onions. I cooked some basil in with the scrambled eggs too, and put a little lemon juice on the greens while they cooked.

This photo got my breakfast table in addition to my plate - ah well.  This one was zucchini, bacon, onion, green beans, chives, and a leafy green called Tyfon Holland greens from the garden. They cook down pretty small (like spinach)- and are super good to throw in just about anything.
